So it is Thursday and our week is coming to a close. What a better way to end a busy work day than to unwind with a cocktail. As Ernest Hemingway once quoted "Drinking is a way of ending the day." This happy hour delight comes to you straight from the restaurant of The Sands at Grace Bay Resort called Hemingway's Restaurant. This resort and restaurant are located on the shores of beautiful Grace Bay in Providenciales, Turks and Caicos. It is a cool rich blended delight of of coffee, Kahlua, vodka, and ice cream, sipping a Kahluaccino blended to perfection. As I sip, I am taken away to holidays past, a majestic sunset view from the deck of Hemingway's , reflection of perfect days of cooling waters, sun, and sand.
MAKES 1 DRINK
INGREDIENTS
4 oz. Kahlua
2 oz. vodka
6 oz. Island Oasis cappuccino mix
1 scoop vanilla ice cream
Several ice cubes

INSTRUCTIONS
Combine all ingredients in a blender and pulse until creamy. Pour the smoothie into a pint or hurricane glass and float a little Kahlua on top. Garnish with a cherry.
